What is a retort pouch used for?

The retort pouch is a flexible, heat-sealable, flat container capable of withstanding the high temperature (121 °C) required for pressure-processing rice and other low-acid foods. This container represents an alternative packaging system to conventional metal cans and glass jars.

What are the advantages of retort packaging?

The retort pouch has several advantages. It weighs less than a metal can. It is flexible, meaning that it can handle a lot of abuse when taken away from home or on military maneuvers. Because it is flat, it takes up little space, making it easier to carry in a backpack or pocket.

How long can retort pouches last?

Food in retort pouches was made by hermetically sealing cooked in laminated plastic and aluminum-laminated plastic pouches and heat processing at 120 °C. Its longest shelf life is 24months.

How do you use a retort pouch?

The food is first prepared, either raw or cooked, and then sealed into the retort pouch. The pouch is then heated to 240-250 °F (116-121 °C) for some minutes under high pressure inside a retort or autoclave machine. The food inside is cooked in a similar way to pressure cooking.

How long does retort food last?
